Carolina Crab Cakes Highlights
INGREDIENTS
•10 ounces of bread crumbs
•7 ounces of mayonnaise
•1 teaspoon of dry mustard
•1 teaspoons of chopped parsley
•1 ounce of Worcestershire
•2 large eggs
•1 teaspoon black pepper
•2 1/2 lbs crab meat
DIRECTIONS
1. Combine all ingredients except for the Crab Meat.
2. Mix thoroughly.
3. Fold in the Crab Meat.
4. Form mixture into balls, approximately 3 ounces each.
5. Flatten Crab balls into Cakes.
6. Sauté in clarified butter over medium heat for 3 to 4 minutes on each side.
