The origin of Country Ham with Red Eye Gravy is a Legend. As the story goes, General Andrew Jackson called for his cook to tell him
what to prepare him for breakfast. The cook had been drinking corn whiskey the night before and his Eyes were as Red as fire. General Jackson
told the cook to bring him some Country Ham with Gravy as Red as his Eyes. Some men nearby heard the General and from then on, Ham Gravy became
known as "Red Eye Gravy." I recommend using a salty Country Ham for the best flavor such a Smithfield Ham from Smithfield Virginia. Enjoy!
INGREDIENTS

2 slices of Country Ham

1 tablespoon of vegetable oil

1 cup strong Black Coffee

2 tablespoons all purpose flour

1/2 teaspoon paprika
DIRECTIONS

Slash the fat to keep the Ham from curling. |

Saute Ham in oil in a skillet over low heat for 3 to 4 minutes on each side. |

Remove the Ham from the skillet, and keep warm. |

Combine Black Coffee and Flour. |

Add Black Coffee mixture to skillet drippings, stiring constantly until thickened. |

Add Paprika. |

Serve Gravy with the Ham. |
