Okra has it origins in Africa
or possibly in the Middle East. There isn't much known about
how it came to America, but one can surmise that it had something to
do with the slave trade. Either way, Okra has been a staple in
Southern Diets for hundreds of years. Okra is
great for gumbos, soups, and stews, and here is a Recipe for Okra
Salad.
INGREDIENTS
DIRECTIONS

In a large sauce pan, bring
salted water to a boil. |

Add Okra and Boil for 3 - 5
minutes or until tender and drain. |

Place Okra in a bowl of ice or
cold water. |

Drain Okra and transfer to a
shallow dish large enough to hold one layer of Okra and add Onion slices. |

Whisk together the vinegar,
pepper and salt in a small bowl. |

While whisking, gently add oil
and whisk until the dressing is emulsified. |
| 7. |
Pour dressing over the Okra and
Onion mixture. |
| 8. |
Stir carefully until all Okra
and Onion slices are coated well. |
| 9. |
Chill covered for 1 hour before
serving. |
