Sea Scallops are a Southern favorite and many Sea Scallop dishes can be found in most reputable
restaurants throughout the South.
The Sea Scallop fishing industry is big in the South where millions of pounds of Sea Scallops are harvested off the Coast from North Carolina to Florida annually.
Here is a tasty Sea Scallop Recipe in a Creamy White Wine Sauce. I

INGREDIENTS

4 tablespoons of clarified butter

1 1/2 lbs medium Sea Scallops

1/4 teaspoon salt

1/8 teaspoon white pepper

1/4 cup brandy
-
1/4 cup of Dry White Wine (I recommend Sauvignon Blanc)

1 cup heavy Cream
-
1/2 teaspoon dried tarragon
DIRECTIONS

Warm butter over medium high
heat in a large skillet. |

Add Sea Scallops and season
with salt and pepper and sauté, tossing occasionally until the Sea Scallops
are opaque (about 1 minute). |

Add brandy and swirl for about
5 seconds. |

Ignite Brandy. When
flames go out, add Wine, Cream, and tarragon. Bring to a boil. |
| 5. |
Remove cooked Sea Scallops and
place in a warmed dish and cover. |
| 6. |
Continue boiling sauce until
thick enough to coat the back of a spoon (about 5 minutes). |
| 7. |
Return Sea Scallops and the
juices to the skillet, stirring briefly to warm the Sea Scallops and then
serve. |
